So I have coil spacers on my truck right now, but I'm thinking of maybe taking them off and putting the front back to stock height and then swapping out the rear blocks for f250 ones to lower the back and level it. Anyone done this to know for sure if it works or if any other suspension modifications are needed to make it work?

It works fine.
Any lower in the back, and you would need new U bolts, as there isn't enough thread on them to tighten up.

What size coil spacers do you have in the front? 2.5" spacers on my F250 made it level when I matched it with F350 blocks. I think to really level an F250 you need like a 1-1.5" spacer up front, ideally.
