I've looked a few of these in recent months and some of them have steam from the pipe. The 7.3 never does this. It goes away in a few minutes... is this typical of stock exhaust systems?

Well there's a difference in it being moisture in the exhaust and actual steam. I would try and see if it smells like coolant. My truck never smokes like that unless it's been raining out and really damp.

Mine will do it when it is really cold out (teens to single digits) and I see most other diesels doing it too.

Like Mike said, need to take a quick whiff of it to see if it smells sweet like coolant, or no smell like condensation/steam, or if it burns your eyes and is fuel.
