Just bulletproof ed low coolant temp?

OK just recently got my truck bulletproofed and new injectors as well. Oil cooler was replaced a couple months ago, less than 2k miles ago. My issue is i just made a 700 mile round trip and my ect didn't ever get above 190 with eot being 204-208 while pulling a trailer. The thermostat was replaced with oem when bulletproofed. Before bulletproofing deltas were 7-8 with or without a trailer.

Any thoughts?

Did they use a Ford oil cooler?

how cold out was it mine does the same thing when its cold out

Yes it's a Ford oil cooler. Ambient temperature was around 34 degrees
