oil temp sensor

alright guys I'm sure this topic has been covered but I haven't been able to find the issues I'm having that had been discussed. I have a 2004 f350 ccsb my oil temp readings are wild. it will be 180 one second then go to 230 then back to 170 then to 190 then to 180 just up and down alot. is that a definite sign that my cooler is bad or could the sensor be acting up. I'm going along the lines that I should replace the cooler anyways but could it bee the sensor acting up?

that swing is not a cooler
