Should I just get an adjustable track bar?

I need one for a 1in leveling kit.

For just a 1" level I don't know that you need anything, probably won't even notice unless you get the tape measure out. Adjustable trac bar is the way to go though if you want it to sit perfect.

When I added a 1" under coil spacer the front end shifted towards the drivers side about 3/4".

Get an adjustable trackbar, a good one will be stronger and keep the steering tighter. If you drop the trackbar mounting point and don't touch the steering, then you'll have more bump steer.

Same with mine. Just annoying knowing it's off center
