The DEF is used most of the time, in a effort to minimize the quantity of regens. Your 500 mile till empty was most likely due to not have one a full tank when you bought it. I see on my 2015 roughly 6500-7000 miles out of a rank of DEF. AND 350-450 miles between regens. My 2011 was in the same area. From what I've heard from guys with Rams and GM stuff. The fords seem to be better on DEF. Even if you drive it hard at some point the truck will default into a regen. Regardless of needing one or not. Same for Chevy and Ram.
