I would like to know what kind of problem start to occur when your injectors are going out. And will running your truck completely out of fuel hurt the injectors

will only harm the injectors if debris clogs them.

symptoms:
hard cold start
excessive white smoke
runs rough until up to full operating temp

I have ran my truck out twice and I'm starting to notice a lag when I try to accelerate. I have a stealth hpop so I did not think it was that but I'm just not sure what it might be

Hard to say if any debris came out of the tank when you ran it empty.... twice.

fuel does keep fuel side components lubricated, so lack of it is minimal/no lubrication. I ran my 94 out on a brain fart but was able to get the tank switched and running again without coming to a complete stop on the interstate

So, if you've run out of fuel twice, are you the type that runs around with your tank low quite often?

Dunno what kinda truth there is to it, but I know my Grandpa kept all his road construction equipment above a half tank all the time, to lower the chances of debris clogging anything in the fuel system.

And he's not the only old timer I know that thought that way.

Could have damaged the fuel pump. Clogged the edge.filters in the tank or collapsed the fuel filter

Cheap way to tell if you have and android is the torque ap. having before and after numbers would help though. Worn injectors can make life harder at startups.

That old timer saying is well founded on older cars with steel tanks.. Leaving them empty or empty ish allowed condensation to build up as the tanks cooled at night....condensation and steel leads to rust build up. But there can be sediment in fuel that collects in a tank.run the tank low chances are greater it picks it up , adding more blockage to the in tank screens. Have you ever serviced those?
