Im gonna need an oil cooler here sometime this year. I just want advice on the job itself. Truck is an'08 with egr delete with elbow. Whats the easiest way to get it done with out popping the cab off? What has to come off the top side to access it?

Turbos out, pull the intake manifold, pull the turbo pedestal, and then you have access to the oil cooler. That's the general things that need removal. There's a few coolant pipes and fuel lines that'll need to be removed plus the fuel bowl as well. Basically you need the top to look like this minus the removed rocker boxes and valve covers.

Here's a view while on the stand. No need to pull the hpfp cover either.

FWIW you can get the oil cooler out without taking the intake off. It is not real fun but you can sneak it out. You do have to loosen the bolts on the manifold though.

And the easiest way to do it?

Pay someone else and sit on the couch and drink. Lol. ;)
