So I put a new water pump in my truck. I flush everything put a new thermostat in. Now my temp gauge is running on the o to r. Before it was running at the n. The thermostat I put in is a 195 to 200*. Would the the new thermostat make it run warmer? Or do I have a bad thermostat?

You probably had a bad thermostat in it that was staying open and not letting the truck get to the correct temp.

You fixed a problem you didn't realize you had.

Okay so this is like after a half hour of running and a short drive... It heats up but doesn't go crazy I didn't know if the new thermostat was a
Warmer temp or if it was the same as stock.

Sounds like you fixed an issue. Having it run warmer is probably a benefit actually.

When you come up to my shop we will check coolant and oil temperatures for you and verify its all in check, i bet its doing perfect.

Mine was the same way until I put a new stat in, then it would run between the r and m depending on the outside temp. I never saw any kind of drop until I put the new radiator in and then it just liked to run on the low side of the r.

It's cold out like 50* it's been running that way so idk the upper hose is cold then it opens and then the upper hose is warm. No leaks or anything
