Gents, I have the sinister kit. Can I just disconnect the exhaust piping and install the block off plates then leave everything else on the truck?

You will have to block off or replace the Y section of the pipe to keep the exhaust out of the engine bay. I suppose you could as long as your current cooler isn't leaking.
Please correct me if I'm wrong.

Remove the exhaust pipe connecting the exhaust manifold to the egr cooler, and remove the exhaust pipe connecting the egr valve to the intake duct. Install plates and done. That's how my truck currently is.

No problem with the open cooler allowing unfiltered air into the intake manifold?

There won't be anything getting into the intake since you're removing the piping and installing the block off plates.
