195-199 is perfectly fine.

really?? I thought I was reading 175 degrees average before the hoses went out. Can my truck run on the 190+ degrees for long periods of time? or is there a good way to bleeed the system that I can do from home? or is it not necessary? sorry for all the questions, I just don't want to go to the dealer anymore because the one here is hopeless. thanks

That's normal operating temperature, if your seeing below that then your thermostats are most likely bad and need to be replaced. The 6.4 has dual thermostats and its pretty common for them to fail. When they do coolant will constantly flow through with nothing to stop it.
