I've had my Insight CS and SCT tunes since almost the day I bought my truck without any issue. Does it tell you what the strategy is if you go into vehicle info?
ECT around 190 is normal depending on conditions.
Now that your EGR cooler is gone the 15* spread isn't as important because there is no EGR cooler to rupture if the coolant flow is restricted.
Yes the temps are getting up there but I wouldn't worry about as much as if you had an EGR...
I've got one. It says I have a leak in the left air bag but it never seems to show any bubbles when I try to track down the leak. Range sucks depending on where you mount the solenoid block. It is also battery hungry. I've been happy with it though.

My 07 had the occasional hanging 3-5 shift both stock and with Gearhead tunes. I ended up putting a GoGo solenoid in and I haven't had a hanging shift since.
